Orange Kale Salad
with Honey-Lime Vinaigrette
Ingredients
Fresh bunch of kale
1 Orange, cut into 1 inch pieces
� cup dried cranberries
� cup toasted walnuts*
Juice of 4 limes
2 tsp honey
2� Tbsp olive oil
Pinch of salt
Instructions
Chop or tear the kale into bite sized
pieces. Top with orange pieces, dried
cranberries and toasted walnuts*.
In a separate small bowl, whisk together
lime juice, honey, olive oil and salt.
Pour over salad. Enjoy!
*To toast walnuts: Heat a skillet over
medium heat. When hot, spray lightly
with cooking spray and toss walnuts
in. Stir walnuts until they become nice
and toasty!

Much as we love our collards, it could be time to
occasionally swap them out for kale, the royalty of
leafy greens. The cruciferous vegetable comes with
an abundance of nutritional gifts, such as fiber and
antioxidant vitamins K, A and C, as well as the min-
erals copper, potassium, iron, manganese and phos-
phorus. Kale can ward off cancer and improve eye
and bone health. If saut�ing or boiling isn't quite
your thing, try it in chip form.
